These quick and easy vegan pancakes are perfect for brekkie, dessert or even a snack!

How to make

· Whisk the flour, baking powder, sugar, vanilla extract, and a pinch of salt in a bowl. Slowly pour the coconut milk until you get a smooth, thick batter.

· Heat the oil in a frying pan over medium-low heat, and add 2 tbsp batter into the pan at a time to make a small, round pancake. Cook for 2-3 minutes until the edges are set and bubbles appear on the surface.

· Flip the pancakes over and cook for another 2-3 minutes until golden on both sides and cooked through.

· Serve with fruit and toppings.
