Diced red or white onion
Grated cheese of your choice (vegan cheese for a 100% vegan recipe)
Seasoning (garlic powder, salt, pepper, mixed herbs)*

Preheat your oven to 190°C.
Wash the courgettes and cut them in half lengthwise. Use a spoon to gently scoop out the center flesh and set it aside.
Once the oven is ready, place your courgettes on a baking tray with a bit of olive oil and cook for 15 minutes.
In a bowl, pre soak the soya mince in hot water or vegetable stock to allow the mince to expand and soften.
In a pan, add your onions, carrots in a bit of oil and leave until cooked.
Add the chopped courgette flesh, the soya mince, tomatoe sauce and additional seasoning and cook for another 5 minutes until the courgette flesh is tender.
Fill each courgette with the mixture and sprin kle the top with grated cheese.
Bake in the oven for about 20-25 minutes, or until the courgettes are tender and the cheese is melted and slightly golden on top.
Once cooked, remove from the oven and let them cool for a few minutes before serving.
